Apple Salad With Cider ~ Horseradish Dressing


Ingredients
4 cups apple cider
2 tablespoons fresh horseradish -- peeled and grated
3 tablespoons cider vinegar
1/3 cup extra virgin olive oil
3/4 tablespoon fresh thyme leaves
salt and fresh ground black pepper -- to taste
1/2 each red onion -- julienned
3 each apples -- peeled and sliced
4 cups baby lettuce leaves -- cleaned and dry. Good place to use some or all arugula .
1 1/2 cups celery root -- cleaned and julienned. May use peeled, thin bias cut celery instead.

Veterans Day Remembrance

Veterans Day always takes me back to my early days, back to the memories of growing up during so many Wars. So many lives changed, so many sacrifices, so many loved ones lost or maimed and so much freedom saved.

I was 5 years old when the Japanese bombed Pearl Harbor and the men and women left to go off to War, and the women that stayed behind had to take up the slack and do the work at homefront. GI Joe, Rosie the Riveter and Nurse Nancy were born of extreme need. Lots of men from my family fought in that War to end all Wars, some of them came home, some didn't and the ones that came home were changed forever. From the steamy Islands of the Pacific to the bitter cold of Europe our brave men and women fought and won on both fronts. That War was the last one where we achieved total victory and we achieved that victory because we were united together in our just cause. I'll Fly Away

Hartford, Arkansas sits a little south of Fort Smith. It would just be another town of 722 souls were it not for two giants of gospel music who lived and worked there for a time. In 1918 Eugene Monroe (E. M.) Bartlett, a Waynesville, Missouri native, co-founded the Hartford Music Company. E. M. was a shaped-note singing school teacher, so in conjunction with his music publishing business he established a singing school in Hartford with sometimes as many as 400 students.
In 1926 a skinny kid from Oklahoma came to Mr. Bartlett's front door and asked what it took to get into the school. After hearing what the tuition and board would be, Albert E. Brumley confessed that he had only $2.50. Sensing something special about this young man, E. M. not only offered him tuition, but also invited him to live in the family household. Premiering on BlueHighways TV on Wednesday, November 12th at 7pm eastern is a special called Frizzell & Friends. David Frizzell welcomes some legends from Country music to the stage for a night of great memories. Enjoy the music of Merle Haggard, Jimmy Fortune, Lacy J. Dalton and many more. Frizzell and Friends will also replay at 10pm on November 12th, and on Saturday, November 15th at 8pm and on Thursday November 20th at noon eastern.


Look for two classic episodes of Stan Hitchcock's Heart to Heart on November 18th and 20th at 7pm with music and stories from the incomparable Billy Joe Shaver and one of country music's greatest songwriters Dean Dillon.

Throughout November also look for new episodes of Show Me Outdoor Adventures, Twice Baked with the Kelly Twins and Quest for Adventure with Glen Lau.


New Talent, New Buddy, and New Show

I want to tell you about a new talented singer, songwriter and host of a new television show.

Her name is Tresa Jordan; her show is called "Turnin'to Country". I really think she is something special because she is down to earth and believes just like I do, that you should have a message in your song, tell the story of good life and true things that go on around you.

Tresa's television show is about returning to the roots of America and finding people with a story to tell, with some down home music and laughter. Tresa goes all over America to find these heartwarming situations to tell you about.
